It's now been four days since I made my promise not to eat anything that walks, crawls,flies or swims. I'm amazingly surprised at how easy it's been and how quickly I noticed the effects on my body. I keep wondering if this is going to be a passing phase or has something really clicked in my brain. I really really hope it's the later.

Thought I'd contribute one of my new salads. Its super duper easy and quick and really tasty.
My friend made this for me and I was hooked.
*Celery- chopped up
*Fennel- chopped up
*lemon juice- sorry we never measure- approx 1 tablespoon I think? you can adjust to taste
*olive oil- again, you can adjust this, not very much required, 1-2 tablespoons (next time I'm trying with Vega EFA oil!!)

I had my first ever athlete interview yesterday. It was pretty darn intense. It was for the T. Colin Campbell Foundation. T. Campbell is who wrote the book The China Study. According to the women conducting the interview, there are not too many ‘super’ athletes that eat a hardcore plant-based diet. I am a super athlete…exciting and also, a breath of fresh air---please, keep the compliments coming. I enjoyed that mental boost.

I spent last week out at the Thunderbird Show Park in Langley, BC, jumping my horse Grafton. Well it was one heck on a week, and my sore body is happy to be back, but I'd rather be out showing than sitting in the office! The show runs for a second week, but unfortunately, my wallet, nor my employer could handle the strain of another week (and I doubt my horse or my back could either!). I wish I could write about how I ended up on the podium with the perfect amount of clean alkaline food. It was clean and alkaline but I ate about 1/8 of what I needed. 2 clementines, 2 gu flasks and 4 raw cookies. I had quite a few mechanical issues which led me to forgetting about food. Silly mistake but I still did well and what a huge learning experience. I learned about my bike that day and about keeping my focus on the race and not on what was slowing me down!
